natural red tints and its own rich and penetrating aroma, to which it
owes it’s renown.
Having
a long and unique tradition as a dairy farm cheese, production of the
Epoisses cheese is today assured by the cheese dairies and milk
producers united by the Syndicat for the Defence of the Epoisses.
